Preparation and Usage
Lemon Pie Filling Make up Instructions
Use McDougall's Shortcrust pastry mix to line cases and bake blind.
To Make: 4 x 18 cm (7") pies (24 portions), Lemon Pie Filling Mix: Full packet (300g), Water: 1.15 litres (2 pints)
To Make: 1 x 18 cm (7") pie (6 portions), Lemon Pie Filling Mix: 75g (2 1/2 oz), 285 ml (1/2 pint)
1 Blend required amount of cold water with the lemon pie filling and mix in a saucepan.
2 Bring to the boil, stirring continuously and simmer for 1 minute.
3 Pour into baked pastry cases, allow to cool completely.
Meringue Mix Make up Instructions
To Make: 4 x 18 cm (7") pies (24 portions), Meringue Mix: Full packet (140g), Water: 160 ml (6 fl oz), Caster Sugar: 220g (8 oz)
To Make: 1 x 18 cm (7") pie (6 portions), Meringue Mix: 35g (1 1/4 oz), Water: 40 ml (1 1/2 fl oz), Caster Sugar: 55g (2 oz)
1 Add required amount of cold water to meringue mix in a mixing bowl with a 4 litre capacity.
2 Whisk a low speed for 1 minute until mix is evenly dispersed. Increase to high speed and whisk until mixture forms stiff peaks.
3 Add the required amount of caster sugar and blend on a low speed for 1 minute.
4 Cook for 40 minutes at 160°C / 320°F / Gas mark 3
Handy Hints & Tips
To make a hard meringues, follow the Meringue Mix Make up instructions, but after adding sugar, whisk on high speed for at least 2 minutes. Pipe into required shapes, dry out in a low oven 100°C / 210°F / Gas Mark 1/4.
Ensure all utensils are grease free.
Make sure the filling is cool before the meringue is added.
Pies may be served hot or cold.
Finished pies should be refrigerated and eaten within 24 hours.
Not freeze-thaw stable.
