For over 150 years McDougalls has inspired caterers and we pride ourselves on offering practical advice and delicious recipes. Of course you could simplify our method, but to get the very best results, here are our make up instructions.
1. Place the weighed out McDougalls Suet Pastry Mix into a mixing bowl fitted with a beater mixing attachment.
2. Blend in the correct amount of cold water on Slow speed for 10 seconds until dough is formed. Do Not Over Mix. Leave to rest for 10 minutes.
3. Roll out pastry to the required thickness. Use as required. Bake suet at 200°C/400°F/Gas Mark 6. For fan assisted ovens cook at 190°C/375°F/Gas Mark 5. Steam large puddings for 90 minutes.
Useful hints and tips...
For a suet sponge pudding: add 300g caster sugar to 1kg McDougalls Suet Pastry Mix. Then add enough milk to form a batter with a dropping consistency.
For rich golden brown suet pastry glaze with egg or milk prior to baking.
Add grated cheese to suet pastry before baking for an extra special savoury finish.
For sweet suet pastry dissolve a little sugar in the water to be used in the mix.
Product is freeze thaw stable.
For best results once opened, keep bag tightly closed and use within 2 months.
Store in a cool dry place. Keep bag tightly closed after part use.
